Vegetarian soup with broccoli and Parmesan

Broccoli is a vegetable known to be bland and not tasty. However, with a few small touches of flavors, you can create a great meal !

It is a soup that is easy to make and you don’t need much ingredients. To make this soup you can find the ingredients easily at the farmer market. Moreover, it is a vegetarian soup, which is mean no meat. The positive points with this soup are that you eat a healthy dish while contributing in reducing CO2 emissions.

First of all, you should know that the recipe is separated in two parts. The first part being the base of the soup with the cooked and mixed vegetables, and the second part being the other ingredients which are added at the end to create more flavour. 

Ingredients for 4 people, but you can make your own measures, depending on the flavours you want to put forward and also the quantities you prefer. 

  • 1 fresh broccoli
  • 4 medium potatoes
  • 1 large clove of garlic
  • 1 pinch of pepper
  • 2 pinches of salt (adjust as desired)
  • 250 ml water +/- depending on the thickness you want.

Other ingredients to be added to the plate (optional but recommended)

  • Pieces of bread
  • Grated Parmesan cheese
  • Olive oil
  • Sliced radishes

The tools you need are quite simple. To make the recipe you need to cut the vegetables, cook them and mix them, but also to grate the Parmesan if it is not done. 


First, you need to preheat the water in a saucepan. So, you can save time when cooking. 

In the same time, you must peel all vegetables (potatoes, broccoli and garlic). For a faster and efficient cooking, it is better to cut potatoes and broccoli in pieces. 

Add the chopped vegetables to the boiling water. Season and let it cook. 

Once everything is cooked, mix the veggies with the cooking water and season with salt and pepper. Mix till you find the right consistency. If you want the soup to be thick don’t add much water and If you want it to be liquid you can add more water. 

In parallel, cut the radishes into thin strips, make pieces of bread and prepare the Parmesan cheese. Like i said before, its optional but i recommend you 100%. Pour the soup in a bowl, and add according to your tastes and preferences, the radish slices, Parmesan cheese and a drizzle with olive oil.
